This is the side dish that earns its place on every dinner we host. The koji in the Tónico does two things in a marinade: it adds savoriness you can't get from oil and salt alone, and the trace sugars in the plantain vinegar caramelize beautifully in a hot oven.
Why a short marinade
Fifteen minutes is plenty — longer doesn't help most vegetables. The Tónico is potent. We're not breaking down protein here (like with a chicken marinade); we're coating the surface and seasoning the edges that will brown. Anything past about thirty minutes and the vegetables start releasing too much water on the tray.
What works
| Vegetable | Cut | Notes |
|---|---|---|
| Carrots | 1-inch chunks or thick batons | Sweetest result. Don't skip. |
| Bell peppers | Wide strips | The char marks on the edges are the prize. |
| Eggplant | 1-inch cubes | Salt 10 min first if it's a big globe variety. |
| Mushrooms | Halved or quartered | Browns fast; pull at 22 minutes. |
| Red onion | Wedges, root attached | Soft inside, charred outside. |
What doesn't
Anything that wants gentle heat — fresh tomatoes (they steam to mush), green beans (overcooked at this temp), leafy greens. Save those for a different recipe.
The bottle
The Tónico is fermented from chickpea koji and plantain vinegar in Pejibaye de Jiménez, Costa Rica. Six ingredients on the label. Read how it's made →
